Hello, honey will not grow bacteria or mold of any kind. Honey never goes bad although, it will absorb the flavors of food around it if the jar is left open. The only reason to pasteurize honey is to lengthen it's liquid shelf life. Crystalized honey can be liquidized by placing the jar in hot water. Honey is a humicant, meaning it seals moisture into the skin. Honey is a good anti-bacterial cover to protect minor cuts and burns from getting infected. Honey has never poisoned anyone or made anyone sick. For more information, look up you local, state/provincial, or national beekeepers, apiary association.
