Hello Corrina, Can you possibly explain why herbal vinegars are made with fresh herbs, whereas herbal infusions are made with dry herbs? Susan Weed explains that the fresh herbs will not release their minerals very well in hot water....can the fresh plant material release its minerals into the vinegar? Thanks so much, eyahna

ann, hello, I can't answer Corinna's thoughts, but here are mine :) We need to access the minerals. There are different ways to do it. Water isn't sufficient to draw them out. Vinegar is. Therefore vinegar we make with the fresh or dried plants, depending on who is talking. Either way the minerals come out. To get them out into water something first needs to be done. This something is drying the plants so that cell walls can break open and water can access the minerals.

Hi - I have a related question about whether one can use anything else besides vinegar to release the minerals, as the vinegar taste often does not agree with me.
